Homemade Açaí Hummus
1 1/2 cups (250 grams) chickpeas
1/4 cup (60 ml) fresh lemon juice (1 large lemon)
1/4 cup (60 ml) well-stirred tahini
1 small garlic clove, minced
2 tablespoons (30 ml) extra-virgin Açaí Oil, plus more for serving
1/2 teaspoon ground cumin
Dash ground paprika to taste
Salt to taste
- Put Tahini and Lemon Juice in the food processor and run for 30 seconds or until well mixed.
- Add in garlic, Açaí Oil, Cumin, Salt, and half the Chickpeas and run for 1m30 or until fully mixed. Then add in the rest of the Chickpeas and continue to run the processor until all the ingredients are fully mixed. If needed scrape the edges of the processor with a spatula to ensure all is mixed in.
- Remove from the processor and place it into a dish, top with Açaí Oil and Paprika, and serve with crackers, pita or bread.
